Momma Knows Best about… Tomatoes!

My mum has always been a big part of why I love to cook, and she definitely has some pretty interesting and great tips to make your whole experience in the kitchen a lot easier. 

Her Tip of the week was all about Tomatoes! Red, Ripe, Delicious Tomatoes!

Have you ever had some tomatoes that you wanting to make a fresh sauce, soup or puree out of and you don’t want to take the time to blanch and peel them first?  The easiest way to approach this is to cut off a bit of the top and bottom of the tomato with a sharp knife, and freeze the tomatoes in a ziploc bag.  Then when you are ready to use the tomatoes for your sauce take them out and run them under hot water.  The skin essentially peels off itself!  A~MAZ~ING!

This is also great to collect some of the tomatoes that are slightly past their prime or have a bit of bruising!  Just cut of the brusing and a piece of skin on the other side.  Collect them in a large freezer bag until you have enough to use!

Once your done peeling the tomatoes let your imagination guide you with adding  combinations of garlic, onions, red or green peppers, zucchini, eggplant, cheese and of course fresh herbs like basil!
