Momma knows best Tip of the Week~ Beets

With the challenge of an all pink menu for a Girls Night In that I have recently hosted, I have definitely been experimenting quite a bit with beets!

Beets are amazing in flavour, texture and colour and are really versatile when it comes down to the crunch.  Beats are, however, very messy and will stain just about anything.

A couple tricks of the trade when tackling these rose coloured morsels..

1. Boiling - boil your beets in a nice big deep pot with lots of water and plenty of space for them to move around.  Overcrowding means that this already time consuming process will take even longer.  Give the beets the space they deserve and they will respond by boiling up faster and better!

2. 2 Day Prep! - boil up your beets the night before you are using them and then once they are fully cooked, keep them in the hot water and let it all cool down together. In the morning you will notice that these once tricky skins will just peel right off!

3. Wear Gloves - go to the dollar store and get those really cheap really disposable plastic gloves.  This will definitely save you a lot of pink staining and funny questions at your party later on that evening!

Check out how my beetloaf cupcakes looked the night of the Girls Night In party.  Beets were used in both the meatloaf, as well as mixed with potatoes to create this awesome pink mashed I used for Icing!
