Mushrooms manage to creep their way into many different recipes and it’s really important to clean them properly in order to maintain their personality and really bring out the best flavour possible.
The best way mum and I have found to clean these little white buttons is to just use a wet paper towel and give them a little rub down.
Running mushrooms underwater to clean them is definitely faster, but it can be problematic because they are like mini-sponges and will soak up unneccessary water which will give them a texture like your fresh mushy’s have just come from the can. Wiping them down with a paper towel or even a pastry brush (recommended by my cousin Becca) to remove the dirt ensures that they do not soak up any water, and can now really take on whatever personality you want them to… say red wine?
