Easter Turkey Tarts

For my second post I have decided to share a recipe that I made for my housemates and friends at Easter.  This recipe started a few years back after moving home from University and courageously asking my mum if I could host our Thanksgiving dinner with our relatives.  It our attempt to tie in my curiostity and our families traditions I was put in charge of the appetizers.  One of the really easy and elegant recipes that mum and I discovered is exactly what I re-created for this holiday.  These user-friendly Turkey Tarts are quick to make, impressive to serve, and delicious to eat. 

Just follow the few easy steps below to create the perfect dinner party treat!

To make 12 Tarts you will need:

  • Large Muffin Tray
  • 12 Turkey Slices
  • 125 g Goats Cheese
  • 250 g Savoury Ricotta Cheese (try to get a slightly firmer ricotta if you can)
  • 5 pieces of shaved pancetta sliced into small squares
  • 1 tbsp. fresh garlic, minced with a bit of salt to help the juices come out.
  • 1 c. fresh spinach, chopped
  • 1/2 c fresh flat leaf parsley, chopped <The dehydrated stuff just isn’t the same:) >
  • Salt and Pepper to taste
  • Mini-roma tomatoes that have been sliced into circles.

To make them it’s a easy as:

1. Lightly grease the muffin tim and line each cup with a piece of turkey.

2. Combine the rest of the ingredients except for the sliced tomatoes in a bowl.

3. Scoop approximately a tbsp full of the filling into each turkey cup.

4. Add the sliced tomato carefully on top.

5. Now bake in a 350 degree oven for about 15-20 minutes or until the whole parcel is heated through, the tomato is just starting to roast, and the cheese is getting slightly brown on top.  Find a great serving tray and enjoy immediately.

I think the most impressive part about this recipe is that the turkey actually holds the shape of the muffin tin!  Remember to keep the filling fairly firm and dry, but have fun with the different possibilities for fillings and turn this easy idea into your own signature pot luck or dinner party dish.
